Some of you
requested this Chicken Fried Rice recipe that Jennie Rees and Amy Noble demonstrated
at the Chinese cooking enrichment activity a while back. Well, here it is! I
also included the Basil Shrimp recipe. Have a question? Just leave a comment at the

Chicken Fried Rice
1 ½ to2 lb Chicken Breast
½ cup soy sauce
2 tsp sugar
3-4 cloves of minced garlic
Salt and pepper to taste (I used
about ¼ tsp salt and ½ tsp pepper)
3 eggs
4 strips of bacon chopped
1 small onion (or ½ med onion)
chopped
½ to 1 bag of frozen vegetables
(peas, carrots, corn, whatever)
2-3 tbsp butter
5-6 cups of cooked white rice
(refrigerated overnight)
3-4 tbsp soy sauce
Salt and black pepper to taste
Canola oil for cooking
Marinade Chicken with soy sauce,
sugar, garlic, black pepper for 4 hours or overnight.
Heat Wok or pan with 1 tbsp of oil. Scramble
eggs. Remove and place on the side.
Add another 1-2 tbsp of oil. Toss in
marinated chicken and cook until done. Remove and place on the side.
Add 1-2 tbsp of oil and chopped bacon. Let bacon cook for about 2 minutes.
Add chopped onions to the bacon and
cook for another 2 minutes until translucent.
Add frozen vegetables and cook for
about 3 minutes.
Add cold rice, stir fry thoroughly
until all clumps are broken up.
Add butter and stir fry until
melted.
Add 3-4 Tbsp soy sauce. Stir fry until soy sauce is even distributed.
Salt and pepper if
desired.
Basil Shrimp
1 lb of raw shrimp
1/2 cup of sliced onion
2 cloves of garlic
1 cup of multi-colored peppers
2 Tbs of oil
pinch of salt

1 Tbs soy sauce
pinch of sugar
some fresh basil leaves
--------------------------------
1. Heat wok with 2 Tbs of oil.
Add garlic and stir for a few seconds then add onion and peppers.
Add pinch of salt, stir
for about a min or 2 until the peppers are semi cooked.
2. Add shrimp and saute about a min
or until shrimp turn pink. Add soy sauce and sugar, mix well.
3. Finally, add basil leaves, turn
off the heat, stir for a few seconds then dish it out.
