Crazy Pizzas



There was such a variety of fun, tasty, pizzas! I heard it was a blast!  Vickie Burke talked about the overuse of salt in our everyday diet which leads to disease and illness.  Did you know that more than 98% of Americans overuse salt? She spoke of using herbs to flavor foods instead!
I was not able to attend, so please leave comments below for others to read about different things you really enjoyed or learned!














Brownie and Berries Dessert Pizza

Ingredients
1
box (1 lb 2.4 oz) Betty Crocker® Original Supreme Premium brownie mix
Water, vegetable oil and egg called for on brownie mix box
1
package (8 oz) cream cheese, softened
1/3
cup sugar
1/2
teaspoon vanilla
2
cups sliced fresh strawberries
1
cup fresh blueberries
1
cup fresh raspberries
1/2
cup apple jelly
  • 1 Heat oven to 350°F (325°F for dark or nonstick pan). Grease bottom only of 12-inch pizza pan with cooking spray or shortening.
  • 2 Make batter as directed on brownie mix box. Spread in pan.
  • 3 Bake 26 to 30 minutes or until toothpick inserted 2 inches from side of pan comes out almost clean. Cool completely, about 1 hour.
  • 4 In small bowl, beat cream cheese, sugar and vanilla with electric mixer on medium speed until smooth. Carefully spread mixture evenly over brownie base. Arrange berries over cream cheese mixture. Stir jelly until smooth; brush over berries. Refrigerate about 1 hour or until chilled. Cut into wedges. Store covered in refrigerator.

Peanut Butter Cup Dessert Pizza

Ingredients:
1 (16.5 ounce) package refrigerated sugar cookie dough
1/3 cup softened butter
1 egg
1/2 cup confectioners' sugar
1 cup creamy peanut butter
15 miniature chocolate-covered peanut butter cups (such as Reese's®), halved
2 tablespoons chocolate chips


Directions:
Preheat oven to 350 degrees F (175 degrees C).
Grease a 14-inch pizza pan.
Mix cookie dough, softened butter, and egg together in a bowl.
Spread cookie dough mixture onto prepared pizza pan to cover entirely.
Bake in preheated oven until dough begins to brown, 10 to 12 minutes; set aside to cool.
Beat confectioners' sugar into peanut butter in a bowl until completely integrated.
Spread peanut butter mixture over cooled cookie dough crust.
Arrange halved peanut butter cups atop peanut butter layer.
Sprinkle chocolate chips around peanut butter cups.

Gluten Free Pizza

1 1/2 cups gluten free all purpose flour (Bob’s Red Mill)
1/2 cup tapioca flour
1 1/2 teaspoon baking powder
1/2 teaspoon xanthan gum
1 packet instant yeast*
3/4 cup warm water (under 110 degrees)
2 tablespoons olive oil + extra for kneading/shaping 
In large mixing bowl or bowl of stand mixer, combine flours, baking powder, xanthan gum, and yeast. While stirring/mixing, pour warm water and olive oil over dry ingredients, mix until combined.
*Alternatively, an active dry yeast can be (proofed) and used – follow these instructions on proofing.
With olive oil on your hands, remove dough from bowl and shape into a ball. Place in large bowl, cover with towel and let rest in a warm area, 10-15 minutes (first rise). Knead again, forming a pizza shape onto prepared baking sheet (olive oiled parchment), cover and rest in warm area (second rise).
Preheat oven to 375. Partially bake dough 10-12 minutes, remove from oven. Add toppings and return to oven, continue baking another 10-15 minutes, until toppings are warm and melty.


Crockpot Pizza Bread

Ingredients
1 Cup Flour
1 1/2 Teaspoons Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Teaspoon Pepper
2 Eggs
2 Tablespoons Extra Virgin Olive Oil
3/4 Cup Milk
1/2 Cup Shredded Parmesan Cheese, divided
1 1/2 cups Shredded Mozzarella cheese
1 Cup Pepperoni Slices, diced
1/2 Cup Marinara Sauce
Instructions
1.     In a bowl, mix the flour, baking powder, baking soda, salt and pepper.
2.    Add in eggs, olive oil, milk, 1/4 cup of the parmesan cheese, mozzarella and the pepperoni slices.
3.    Stir well.
4.    Spray / Grease crockpot.  add in one half of the batter.
5.    Put a layer of the marinara sauce on top of the batter.
6.    Add the rest of the batter evenly on top of that.
7.    Top with remaining Parmesan cheese.
8.    Cook on HIGH for 2 hours or until the batter is cooked in the middle.
9.    Dip in extra Marinara sauce if desired.

                

                         


Stuffed Crust Pizza Bianco

Ingredients
  • DOUGH:
  • 1 cup water (70° to 80°)
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 cups all-purpose flour
  • 1 package (1/4 ounce) active dry yeast
  • TOPPING:
  • 2 cups sliced fresh mushrooms
  • 1/2 cup chopped onion
  • 3 tablespoons olive oil
  • 3 garlic cloves, minced
  • 2 tablespoons minced fresh basil
  • FILLING:
  • 2 cups (8 ounces) shredded part-skim mozzarella cheese
  • 1 cup (8 ounces) ricotta cheese
  • 1/4 cup grated Romano cheese
  • 1 tablespoon minced fresh parsley
  • Grilled Italian Sausage
  • Mozzarella cheese sticks
Directions
  • In bread machine pan, place dough ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
  • When cycle is completed, turn dough onto a lightly floured surface. Punch down; cover and let stand for 10 minutes. Press dough into a 13-in. x 9-in. baking dish coated with cooking spray; build up edges slightly.
  • Roll out edge of pizza slightly thinner and roll in mozzarella  sticks all around.
  • In a large skillet, saute mushrooms and onion in oil for 3-5 minutes or until onion is crisp-tender. Add garlic; cook 1 minute longer. Stir in basil.
  • In a small bowl, combine the filling ingredients; spread over crust. Sprinkle with vegetable topping.
  • Bake at 400° for 35-45 minutes or until crust is golden brown. Yield: 12-16 slices.

Ceaser Salad

Ingredients:
1 head romaine lettuce
3/4 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 tablespoon ground mustard
1 clove crushed garlic
1 egg
1 lemon, juiced
freshly ground black pepper
1/4 cup grated Parmesan cheese
1 1/2 cups garlic croutons
1 (2 ounce) can anchovy filets
Directions:
1.
Clean lettuce thoroughly and wrap in paper towels to absorb moisture. Refrigerate until crisp, at least 1 hour or more.
2.
In a bowl or jar combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice. Whisk until well blended.
3.
Coddle egg by heating 3 cups of water to boiling. Drop in egg (still in shell) and let stand for 1 minute. Remove egg from water and let cool. Once cooled crack open and whisk egg into dressing. Whisk until thoroughly blended.
4.
Mash desired amount of anchovies and whisk them into the dressing. If desired set aside a few for garnish.
5.
To assemble, place torn lettuce leaves in a large bowl. Pour dressing over the top and toss lightly. Add the grated cheese, garlic croutons and freshly ground pepper, toss. Serve immediately!

Potato Latke Pizza

Ingredients: 
  • FOR DOUGH: 2 cups bread flour, 1 envelope pizza yeast, 1½ teaspoons sugar, ¾ teaspoon salt, cup of very warm water (about 120 degrees F), 3 tablespoons olive oil
  • FOR PIZZA: 3-4 red waxy potatoes, 2 golden delicious apples, 2 teaspoons salt, 1 tablespoon sugar, 3 tablespoons olive oil, 1 garlic clove, minced, 8 ounces sour cream, 6 ounces goat cheese, 2 tablespoons fresh rosemary, chopped
Instructions: 
  1. Preheat your oven to 450 F.
  2. First, make your dough. Mix together 1 cup flour, yeast, sugar and salt in a bowl. Then add oil and water and mix.
  3. Add in flour a little at a time and knead until you have a ball (you may not use all the flour), and then knead four more minutes.
  4. To cook your potatoes, put them into cold water and bring to a boil. Your potatoes are cooked when you can insert a knife and it comes out clean. When cooled, slice them into ⅛ inch slices.
  5. Slice your peeled apples into ⅛ inch slices as well. Then mix your apples with 1 tablespoon sugar, ½ teaspoon salt, and 1 tablespoon oil.
  6. Now it’s time to build your za! Roll out your dough on a pizza stone or pan covered with parchment paper. You can make a crust if you like. Then drizzle with olive oil.
  7. Layer potatoes and apples on your dough, alternating one of each. Drizzle with more oil and sprinkle with minced garlic.
  8. Top with sour cream, salt, pepper, chopped rosemary and dollops of goat cheese.
  9. Bake for 20 minutes until the crust is brown and the cheese is bubbly and delicious.
